Voglietta with Fennel
A particular cut of meat, called Etrusca, is used to make this Voglietta , which has the marbling of fat as its main characteristic. The higher percentage of fat inside makes the mixture much softer, and the addition of fennel seeds, coriander and allspice give unique aromas and flavors.
